Old knife smiths are rare.
I remember those of Nippon.
Cost a real fortune one of those.

May be I get one here for you.

No Victorinox or Wenger as multiple tool in use?

I have a Gerber Suspension multitool, and it’s great.

Bought it 10 yrs ago (ish) for under £30 GBP

I do have an old victorinox, an old swiss and a new Gerber and leatherman multi tools. I got them but they rarely if ever get used.

I took a look at the Gerber.
Will seek at the flea market for such one.
Nice tool indeed!

Regarding those multi tools, seems there are many worthless fakes around.
Same with Victorinox, but these can be identified easily.
Genuine Swiss knives show up here at the flea very often.
If these are a real bargain I go for those of course,
but I like much more those old ones with that antler handle.
More stylish. :grinning:

I’m on the victorinox email list.

Last summer they gave all on the list a free veg peeler and tomato knife… I emailed big boss as catch was going to London to collect. Instead I got them posted :grin: the Tom knife is used a lot, as is soo good… Thin flexible blade, so not good for chopping, but slice anything, even meat (like the tough sinew in chicken breasts).

Kitchen knives!
I am so happy to have flea markets here.
So we have fantastic ones in the house.

Normally the ones are offered cheap are stamped only, not forged.
Not possible to sharpen.
I am using a special two sided stone to do this. (Using oil)

Works as I am skilled. :smiley:

When I was cheffing, I had a lovely Sabatier 8" chef’s knife, that sharpened nicely. It would hold its edge for a week.

So every Monday morning, I’d resharpen my blade before starting work. A good quality steel does the job well, but if not done properly, it’ll dull the edge… So for them a knife sharpener tool is fine, it’s sensible not lazy to use a specific tool, if you can’t use the old school way.

I know this sharpeners.
Had one, NOT satisfied, was damaging the blade, too hard for that steel.
The best way is to use such a stone

The right angle is important, but you old “butcher” :rofl: know.

I used to be able to tell you the degree of angle, but that was yearssss ago.

I think now I’d say, run the back of the blade against your thumb (hard to describe without video) as you run the edge on the stone

My favorite brand of multitool is leatherman. I have a gerber too, and Although it’s nice, it doesn’t live up to the gerber…

When taking a further look at a genuine Leatherman and comparing it to a Victorinox I see only the wrench is missing.

Now even leatherman has realised the importance of.locking tools… One day V may do the same.

We have all been there with a pocket knife, that snapped shut and cut as on the way! Myself taking a few cuts before being more careful! Never was the quickest learner. :stuck_out_tongue_winking_eye:
