I’ve made spaetzle from scratch too, had a board to make it and held it right over the pot of boiling water.
Do you pan fry yours once it’s boiled?

Nope just boil it then butter and gravy. Apparently my oma (German for grandma) used to make them with just a spoon into the boiling water

Yes, the traditional manner… not a lot of people nowadays would have the skill to be able to do with a spoon.
Would develop with many years of practice.
